He has won the Nation’s Restaurant News Hot Concept Award an unprecedented 3
times, with PF Chang’s China Bistro, Pei Wei Asian Diner and Fleming’s Prime
Steakhouse and Wine Bar.

Restaurants is the holding company for Paul Fleming’s interests in many of
the successful restaurant concepts co-founded by Mr. Fleming over the years,
including the popular Z’Tejas Grill and the very successful Fleming's Prime
Steakhouse & Wine Bar, which he developed with Bill Allen, now CEO of
Outback Steakhouse, Inc.
2006 saw the
debut of a new joint venture with Outback and Mr. Allen when Blue Coral
Seafood & Spirits, an upscale seafood restaurant, opened in Fashion Island
in Newport Beach, California.
Mr. Fleming is
still developing new concepts. In summer of 2007 he will open the first Paul
Martin’s American Bistro, an upscale American restaurant with the bohemian
feel of San Francisco and the Napa Valley, offering simply prepared,
flavorful food prepared with the finest ingredients available, including
wild line caught fish, free range meats and organic produce.
